Ingredients

  • 1 lb grass-fed beef stew meat

  • 2 cups sweet potatoes, cubed

  • 1 cup carrots, sliced

  • ½ cup onion, diced

  • 2 cloves garlic, minced

  • 3 cups chicken broth

  • 1 tbsp tomato paste

  • 1 tbsp olive oil

  • 1 tsp coconut aminos

  • 1 tsp dried thyme

  • 1 bay leaf
